Having grown up in the Appalachians, I know a pot of beans well.
I have already mentioned that when I think of my grandpa (always just Dad in my mind), memories always include the smell of beans simmering on the stove.
Papaw didn't think too far from the beaten track, but there are so many ways to get creative with beans!
For this delicious 15 taco bean soup, I used Hurst® HamBeens® 15 bean soup to create this easy 15 taco soup recipe.
The 15 Bean Soup Mix is one of the many delicious Hurst varieties, in the dry bean section of your local grocery store. I get mine at Kroger!
This 15 bean taco soup has a great flavor. It is not too spicy and goes perfectly with a variety of toppings.
We enjoy ours with avocado slices, fresh cilantro and cheese.
Sour cream and tortilla chips would also be an amazing addition to your bowl.
15 ground beef bean soup
Although you are used to cooking your 15 bean soup with ham, you will also love ground beef.
If you want to lighten this soup up a bit, you can also make it with ground turkey or leftover holiday turkey.

1 packet of 15 Hurst Bean Soup
1 lb ground beef, I used 90/10
1 large yellow onion, diced
2 10 oz. Ro-tel boxes, original
1 15 oz. tomato sauce
1 15.25 oz. can corn, with liquid
2 tablespoons taco seasoning
Sort and rinse the beans, set aside.In a 6-quart Dutch oven, brown the beef and onions. Drain any excess fat.Add the beans and cover with 8 cups of water, then bring to a boil. Reduce the heat and simmer for 1 hour 30 minutes. Add the rest of the ingredients and stir. Bring back to the boil then reduce the heat and simmer an additional 30 to 45 minutes or until the beans are tender.Garnish with avocado, cilantro and grated cheddar.
