I really tried to mix up the breakfast routine in our house. Sometimes it's easy to get caught up in a pattern of eating the same things over and over again, so in an effort to cook a light and nutritious breakfast to start the day, I decided to make this recipe for super crust-free mini quiches with delicious sausages and vegetables!

Crispy Sausage and Vegetable Mini Quiches - This recipe for crispy mini quiches is tasty and delicious. It's packed with nutritious, healthier ingredients like turkey sausage, spinach, mushrooms and low-fat cheese! Delicious, fast and easy.

If you prepare these rindless mini quiches in advance, you can refrigerate or freeze them for a quick breakfast for the days to come. I also like that the mess is almost zero thanks to the PAM cooking spray. These mini quiches slide straight out of the muffin pan when I use a PAM cooking spray and I have virtually no residue to deal with afterwards.

Leaving up to * 99% less residue, PAM is your ally in the kitchen and saves you time during preparation and cleaning.

*against. main cooking sprays (except olive oil), after spraying on glass cookware, baking at 400 ° F for 30 min, cooling, then washing in standard household dishwasher with detergent and repeat 4 times

Of course, these mini quiches are not just for breakfast. They also make the little appetizer, brunch or even the perfect dinner if you are on a low-carb diet.

If you wanted to make this rindless mini quiche recipe even healthier, you can use egg substitutes or use more egg whites in your recipe.

You can also skip the meat completely and add more vegetables, or use a fat-free cheese.

The options are really limitless!

I like to make mini quiches with ingredients my kids like (crumbled bacon and cheese) and let them eat them as an appetizer in the morning before school. Fast, easy and delicious.

Thanks to PAM, these succulent mini-quiches slide directly out of the muffin pan without effort.

Does the cleaning time I save with PAM really matter? Absolutely. There are days during the week when I barely have time to prepare a meal, let alone spend precious hours in the evening struggling with the dishes, and with PAM, my cleaning is a game of 39; child.

ingredients

8 ounces turkey breakfast sausage

8 ounces of mushrooms, sliced

1 teaspoon extra virgin olive

1/4 cup of water

1/2 10-ounce bag of fresh spinach

1 cup light cheddar

1/2 teaspoon ground pepper

1 cup 2% milk

5 eggs

3 egg whites

PAM cooking spray

Instructions

Preheat the oven to 325. Place the rack in the center of your oven and coat a non-stick muffin pan with PAM cooking spray.
Heat a large skillet over medium-high heat, cooking the turkey sausage until golden. Transfer your fully cooked meat to a bowl to cool it. Add the olive oil to the pan, then add the mushrooms and cook until they are golden. Add the cooked mushrooms to the bowl with the turkey sausage.
Add the water to the pan (you can use a clean pan or the one you just cooked the mushrooms in), then add the spinach. Simmer until tender 2-3 minutes and the water has evaporated (or drain the water). Transfer the wilted spinach to the bowl with the sausage and mushrooms. Add cheese and pepper and stir.
In a medium bowl, whisk the eggs, egg whites and your milk. Divide the mixture evenly among the prepared muffin cups. Place a tablespoon of sausage mixture in each cup.
Bake 25 to 30 minutes, or until the top begins to brown. Let cool on a wire rack for 5 minutes. Place the grid to open the pan and turn the quiches outside. Turn vertical and cool.
