2 pounds ground pork
1 large yellow onion, chopped
4 garlic cloves, minced
2 tablespoons chili powder
2 teaspoons of salt
2 teaspoons of dried oregano
1 can (28 ounces) simmered tomatoes
2 cans sweet Ro-Tel diced tomatoes with green peppers
1 can (15 ounces) tomato sauce
1 can (15 ounces) kidney beans with liquid
1 can (15 ounces) pinto beans, drained and rinsed
Combine ground pork, onion and garlic in a large pot. Cook and stir over medium heat until the pork is brown. Drain.Stir in chili powder, salt, oregano, tomatoes and tomato sauce; break the tomatoes, stirring. Heat to a boil, reduce heat to simmer and cover. Cook, stirring occasionally, for 1 hour.Stir in the beans. Simmer, uncovered, for 20 minutes; stir from time to time.
