I'm always looking for fun Halloween dinner ideas to make for my kids for Halloween. These mummy hot dogs are always a big hit. This year, I decided to try something different and came across these Halloween stuffed peppers. They are super easy to prepare and taste good too.

To make these Halloween stuffed peppers, you will need an orange pepper for each person. The Mexican stuffed peppers I made served about 6 people.

To make Mexican stuffed peppers, you can just use grated chicken and Mexican style rice from another dinner. I had no leftovers, so that's how I made mine. This recipe serves about 6 people.
6 orange peppers
1 can Rice-a-Roni Mexican rice
3 chicken breasts
1 can black beans, drained
Grated cheese (optional)
Sour cream (optional)
Cook the rice according to the directions on the box, fry or boil the chicken and grate it. Drain the can of beans.
To prepare the peppers, wash and cut them. Use a spoon to gently remove the inside of the pepper.
