Loaded Baked Potato Salad – Creative Housekeeping

I don't know where the baked potato salad has been my whole life, but I'm sure I missed it. I think I already bought it at the grocery store, but I wasn't so impressed. Last week, I came across this recipe and thought it was worth giving it another try.

It had nothing to do with the baked potato salad I bought at the store, and it was just amazing. I will definitely try again. I look forward to taking her to our next family reunion.

Loaded baked potato salad recipe


10-12 medium red potatoes
3/4 c. Mayonnaise
3/4 c. sour cream
1 C. grated cheddar cheese
3 tablespoons. chopped green onions
6-8 slices of bacon
Salt and pepper


Wash the red potatoes and cut them into 1 inch cubes. You can peel the potatoes if you want, but since this recipe calls for red potatoes, I decided to leave the peels and the salad went well, the peels and everything.

Note: You can replace regular potatoes with red potatoes.

Place the cubed potatoes in a large pot of boiling water and cook until the potatoes are fork-tender, about 15-20 minutes.
