8 slices of bacon, crispy fried

1 large cauliflower, cut into florets

1/2 cup sour cream

1/2 cup mayonnaise

1 tablespoon ranch seasoning

¼ teaspoon black pepper

1 cup grated colby cheese and monterey jack

1 cup strong cheddar

6 tablespoons chopped fresh chives, divided

Instructions

Preheat the oven to 370 degrees. Spray an 11 × 7 baking dish (you can also use 13 × 9) with a non-stick cooking spray. Fry the bacon in a large skillet until it is crisp and crumbled. Set aside the cauliflower until tender, about 15 to 20 minutes, combine the sour cream, mayonnaise, ranch seasoning and black pepper in a large bowl. Add the steamed cauliflower florets, half the bacon, 1 cup strong cheddar and 3 tablespoons of chives; mix well. Transfer the mixture to the prepared baking dish and garnish with your colby & monterey jack cheese and the other half of the bacon. Cover the dish with aluminum foil and bake for 20 minutes. Remove the aluminum foil and cook for another 5 to 10 minutes or until the cheese bubbles and begins to brown. Garnish the pan with the remaining chives.
