Homemade marshmallow rabbits are a fun Easter treat to make with your kids. You only need white chocolate chips and colorful marshmallows. You can have them ready to eat in less than an hour.

Easter bunnies with marshmallow
To melt the white chocolate chips in the microwave, place the white chocolate chips in a microwave safe bowl with about 1 tablespoon. shortening (shortening helps to melt chocolate more gently).
Place the bowl in the microwave and microwave for 1 minute. Remove from microwave and stir. Microwave for an additional 30 seconds. Stir again. The chocolate should be completely melted at this point, but if it is not, heat another 30 seconds.
Remove the bowl from the microwave and quickly stir in the colored marshmallows. Do not stir too long or the marshmallows will start to melt.
Spread the marshmallow mixture on a cookie sheet or jelly pan lined with parchment paper (to prevent the marshmallows from sticking to the pan). Place the pan in the freezer for about an hour until the white chocolate hardens.
