1 box of Pillsbury Refrigerated Pie Crusts, softened as indicated on the box

1 1/2 cups cold milk

1 pkg. (3.5 oz.) Vanilla pudding instant mix

1 1/2 tablespoon spices for pumpkin pie

1 can (15 oz) pumpkin puree

Instructions

Heat oven to 425 ° F. Unroll 1 box of Pillsbury ™ Refrigerated Pie Crusts, softened, on a flat surface.
Use a 2 "round cutter (I use this one) to cut the circles and place them on the outside of the mini non-stick muffin pan cups upside down (I use this one), skipping all the others. Repeat with the second crust. Bake for about 8 minutes or until the crust is golden brown. Cool 5 minutes; remove the shells from the pan on the cooling rack to cool completely.
In a large mixing bowl, whisk together the milk and pudding mixture until thickened. Stir in pumpkin pie spices and pumpkin puree until blended.
Fill each shell with the pumpkin mixture. Serve immediately or refrigerate and serve within 3 days. Garnish with whipped cream just before serving.
