Buckeye Balls are essentially Peanut butter balls dipped just partially in chocolate that gives the signature shape of a Buckeye nut.

These are made with basic ingredients, but the creamy center of these candies come from creaming the peanut butter and sugar until smooth. I use an electric beater for this job as creaming needs effort with patience. So do not stop until you have a perfect consistency to roll them out. You can adjust the consistency by adding more peanut butter or sugar at a time. It is important to keep an eye on this. The perfect consistency is when it does not feel too dry or crumbly, it should not feel too sticky on the hand as well. Freeze them so it sets into the shape after rolling, and this step cannot be skipped as you need to dip them in chocolate. Store them in your fridge for more than a week, but I’m sure it will get over before a week, especially if you have kids at home.
