More pressure cooker recipes
1 tablespoon olive oil
2 boneless, skinless chicken breasts
8 cups low sodium chicken broth
1 medium onion, diced
3 garlic cloves, minced
3 carrots, sliced
2 celery stalks, sliced
2 sprigs of fresh thyme
1 bay leaf
¾ cup of orzo, uncooked
1 tablespoon freshly squeezed lemon
Salt and pepper to taste
Press the brown / popped button, set the temperature to high, then press start. Let it warm up. Add olive oil, onion, garlic, carrots and celery. Sauté 2 minutes. Add the thyme and bay leaf. Place the chicken breasts on the vegetables, then pour a cup of chicken broth. Place the lid on the pan and lock. Press the soup function (or manually set on high pressure cooker) and set the cooking time to 10 minutes. At the end of cooking, use the natural pressure release method and let it release naturally for 10 minutes. Remove the chicken, thyme and bay leaf. Add the remaining broth to the pan, select the brown / stir-fry function at high temperature and bring to the boil. Add the orzo and cook al dente according to the directions on the box. While the orzo is cooking, shred the chicken. When the desired doneness of orzo is reached, stir in the grated chicken. Squeeze the lemon juice and salt and pepper to taste. Serve hot with crackers or bread and enjoy!
