When I was cooking for Thanksgiving, I was looking for fun new candy recipes to try. I came across this rocky road fudge recipe and I had to try it because I actually had all the ingredients to make it.

12 oz. (2 cups) chocolate chips
1 can of sweetened condensed milk
2 tablespoons. Butter
Pinch of salt
1 1/2 tsp. mini marshmallows
1 C. chopped peanuts

You can make this fudge in the microwave or on the stove. I made it on the stove by melting the chocolate chips, sweetened condensed milk, butter and salt in a medium saucepan, stirring until the chocolate was completely melted and smooth.

To heat in the microwave, mix the same ingredients in a microwave safe bowl and bake in 30 second increments until the chocolate is melted and smooth.

Once the chocolate has melted, remove the pan from the heat and quickly incorporate the mini marshmallows and peanuts. Instead of peanuts, you can also use walnuts or pecans.

Pour the chocolate mixture into a greased 8 x 8-inch dish. Refrigerate for several hours until firm. The chocolate will be very sweet at first, but it will become completely hard again in the refrigerator.
