This rustic lentil stew ends up being a fairly large portion which should easily provide 8-10 servings. Although I have never frozen this recipe before, I think it will freeze well.

2 tablespoons olive oil
3 celery stalks, sliced
1 large red potato, cut into 1 "pieces
3 medium carrots, sliced
1 small onion, chopped
12 ounces of kielbasa, sliced
1 pack Hurst & # 39; s Brand Garlic & Herb Flavored Lentils
8-10 cups of water
fresh parsley for garnish
Heat the olive oil in a large saucepan or a Dutch oven. Add celery, carrots and onion. Sauté for 8-10 minutes, until tender.
Add kielbasa, Hurst & # 39; s lentils (including garlic and herb seasoning sachet included in the bag), potato and water. Note that for a thick stew, use 8 cups of water or up to 10 cups of water if you prefer a thinner soup. Bring to a boil, reduce heat and simmer stew, stirring occasionally, for about 35 minutes or until lentils and potatoes are tender.
Garnish with fresh parsley, serve and taste this delicious hearty lentil stew!
