Strawberry Shortcake Cupcakes – Creative Homemaking

If you're looking for a new cupcake recipe to try this summer, try these strawberry cupcakes. They are really different from traditional cupcakes, they really taste more like shortcake than cupcakes.

Shortbread strawberry cupcakes

Cupcake ingredients:

1 C. softened butter
2 c. Granulated sugar
4 eggs
1 C. vanilla extract
2 3/4 c. flour
2 c. yeast
1 C. Milk

Ingredients for frosting:

1 C. softened butter
3 1/2 tsp. Granulated sugar
2 to 4 tablespoons. Milk
1 C. vanilla
pinch of salt
3 c. chopped strawberries

If you want to save time, you can use store-bought frosting, but this buttercream frosting is worth it if you have time to do it.

Preheat the oven to 350 degrees. Line the cupcake molds with cupcake liners. This recipe will make 24 small cupcakes, I like to enlarge my cupcakes, so I made about 18 slightly larger cupcakes.

Cream the butter and sugar with a blender for a few minutes, until the mixture is light and fluffy. Beat the eggs one by one. Add the vanilla extract.
