This delicious tater tot casserole recipe inspired by tacos is filled with black beans, corn, ground beef and lots of flavors. Oh, did I mention that it's also loaded with cheese? Yes. We certainly have the cheese component covered!
Tater Tot Mexican Pan Recipe
There is just something to add tater tats to a dish that makes it especially fun for kids. I remember the first time I told the kids that I would make tater tot casserole for dinner. Their eyes lit up with joy.
My little ones love to eat these golden tarts covered with sticky cheese, and I love knowing that they are getting a hot, hearty meal. Pan recipes are always a good choice when it comes to feeding my team.
Even better than my tater tot Mexican pan recipe is super quick to make. It's really perfect for weekends or weekends when you don't want to spend a lot of extra time in the kitchen.
I used ground beef in my casserole dish, but the ground pork would also be delicious. I often use ground pork, in fact, my ground pork tacos are amazing if you are interested in whirling this protein!
It looks like easy casserole recipes like this are sort of out of fashion, but I'm still a fan of meals that you can cook quickly and keep the whole family happy.

In fact, my daughter was on a tater-tot service the last time we made this casserole. I let her add the tater tots to the top of the pan and she also helped me sprinkle the cheese over the dish towards the end.
The only thing that makes a plate of my Mexican tater tot pan even better is a big dollop of sour cream on top and fresh cilantro.

More Mexican-inspired recipes
1 lb ground beef 85/15
1 onion, diced (about ¼ cup)
1 sachet of taco seasoning (1 oz)
1 can of green peppers (4 oz)
1 can (15.5 oz) black beans, rinsed and drained
1 bag of frozen corn (14.4 oz)
1 can (10 oz) red enchilada sauce
3 cups grated cheddar and Monterey jack cheese (outside the block), divided
4 cups of frozen tater
Coriander, optional garnish
Sour cream, optional
Preheat the oven to 375 degrees. Spray a 9 x 13-inch baking dish (I used this one) with a non-stick cooking spray.
Add the ground beef and onion to a 12-inch skillet, sauté the meat until well done. Drain the excess fat and return to the pan. Add the seasoning sachet, green peppers, black beans, frozen corn and enchilada sauce to the meat and onion, stir until well combined. Cook over 8 to 10 minutes over medium heat. Add 2 cups of grated cheese to the meat mixture and stir until well blended. Pour into the baking dish and spread evenly. Place the tater tots evenly on top. Bake for 35 to 40 minutes.
Remove from oven, add remaining cup of cheese on top. Cook another 5 minutes or until the cheese is melted. Garnish with cilantro and garnish with sour cream!
